This large jar of Poulet Basquaise serves two people and is ready to eat after being gently warmed through in a saucepan. Poulet Basquaise (or Basque Chicken) is a traditional dish from the region of France that borders Spain in the heart of the Pyrenees.

 

Basquaise (also known as Piperade), was originally a vegetable and bread dish from Soule, in the eastern part of the French Basque Country. It evolved into a complete meal when served with tuna on the Basque coast or chicken further inland. Traditionally Poulet Basquaise would be served with potatoes or rice, to soak up the sauce, which is made from peppers, aubergine, and courgette, with a tomato base.

 

This Poulet Basquaise is flavoured with the traditional sweet and warm Basque chili pepper, piment d’espelette, and is made by La Belle Chaurienne in Castelnaudary in the South West of France.
