Clément Lavallée Chablis 2020

Clément Lavallée is a young vigneron who set up his own label in 2019. He is the son of established wine producer Erick Lavallée, who runs Domaine Grand Roche in Saint-Bris-le-Vineux. Although not certified yet, Clément cultivates his vines using organic methods, and his wines are not filtered. ‘Les Ardillers’ comes from a 1.6-hectare parcel of 40-year-old vines facing east, where the soil is predominantly limestone and clay.
